Andre - Miso-Glazed Butternut Squash
When I think about fusion, I focus on expression of cultures and flavors in ways you wouldn’t normally see. The dish had no inspiration, but I really wanted to work with miso and mushrooms. I wanted to add a bright-sweeter flavor and thought of butternut squash. This recipe utilizes Asian ingredients in unique ways, allowing you to taste something you’ve never tasted. I had a great time working with miso and learning about other cultures.
