Melia - Pikliz

Growing up going to parties was very exciting, I always looked forward to the food. Haitian party food was something like a treat for me: the griot, bannann, peze, mac & cheese, and Pikliz. It was a treat. I wanted to introduce Pikliz to Future Chefs to share a part of my culture that always makes me happy and that I can always look forward to. Traditionally Pikliz is made with vinegar, but I’ve come to find that using lime juice helps retain the crunch from the cabbage and carrots, while still allowing the vegetable to wilt. Using my essential skills has taught me how to communicate with my team and come up with a solution. I had to learn how to manage my time and learn how to make the most out of it.
